10+ Sites Suddenly Dropped in GSC, What Gives?

I have 10 - 20 sites that would rank on Page 4 - 6, not the best, but hey. The sites are approximately 1 month old. Upon launch and importing to GSC, they were ranking pages 4-6. Now, this week all of a sudden, I am either 1) not ranking or 2) ranking in page 9-10. No major changes or updates. The impressions were about 1k daily across domains but now they're basically 0. Does an H5 header just below h1 affect my SEO?

The website I'm responsible for has a form to sign up for a newsletter that uses an h5 tag right below the H1 and opening paragraph. I pay a lot of attention to SEO in the articles I write, but am wondering if this out of order H5 will affect how Google sees my content. Is it worth debating that we should remove the form?

Wordpress site incompatible with theme update

If a post relates loosely to its category, does that harm SEO?

My posts are somewhat adjacent to the category they’re assigned to, but a more accurate category name would obviously be better. For now, I’m grouping semi-unrelated posts under the existing category until I have enough content to create a separate one. Is this a bad strategy?
