I was having a similar issue where pings would sometimes get to 2000ms just to my router. I made two changes that seemed to help:
* moved the router to be above the TV, it used to be behind it
* since that wasn't enough, I also decreased the wireless channel bandwidth from 40MHz to 20MHz to reduce noise from neighboring wireless.

I live in an apartment complex so even the 5GHz wifi can get congested, especially with new defaults of 40/80 or even 160MHz channels. 2.4GHz is essentially unusable, only works with IoT devices.

I like the idea, could use a discord bot like that as well.
