This is because Indians in America reach their full genetic potential, representing what Indians in India would actually look like if most didn’t end up stunted as kids, or have a bare minimum survival diet through teenage and adulthood. Nutrition or nurture as opposed to nature has a much larger role than what one would expect in determining heights, bone structure, muscles, stature, skin/hair quality etc in a nutritionally malnourished country like India. This nurture would also include grooming, better lifestyle habits, cleaner air and water.

This is not an American Indian vs Indian thing. These are sadly class differences manifesting as very real and distinct physical disparities between those with a safety net and those without. And is something India must actively work to fix. OP is likely comparing the masses of India who are burdened by the bare necessities of life with American Indian kids who are already from a selected white collar/ privileged diaspora that entered the country being better off than 90 percent of the population in India.

Compare American Indian kids and kids from economically prosperous pockets of the country in cities and towns and you’ll see that most look alike.
