If you don't already, try moving to an isolated small northern village before deciding to going off the grid. It will help you gradually get used to not relying on things that most urban dwellers take for granted (e.g., hospitals/healthcare, accessible/affordable groceries, power outages during storms, ordering things online, 22 hour night, limited clean water/fuel, etc.).
