What do you do to keep your macOS minimalistic?

I've used Mac since OS X Tiger which was released 2005. The older I get, the more minimal I want my system to be. Fewer 3rd party apps, fewer menu bar icons, fewer animations, single-color wallpaper, and so on. And no, I don't want to sit in a minimal terminal on linux lol. I just think that less is more. I also think that the more random apps I install, the higher is the total security risk. So please describe / show your macOS setup :-) How do you make it simple and clean? Or extra safe?
