If you want it neat & organized, just draw one icon onto another, in matching categories. The Mac will then make a folder and give it a name. You can change the name and drop more apps into it.

By creating some folders you can group everything together.

Whether it’s worth the effort you need to decide yourself.

Perhaps I'm old school, but in the Finder, I select Go menu, then Applications.

Hopefully the changes you make there will carry over to Launchpad, dark mode, or whatever new fangled thing you're using.
