It's a small earthen or metal pot. A small cotton wick and since it is for lord ganesh, it should be filled with ghee. If you have access to these or you think you can arrange it, that would be better. It shouldn't be blown out, better to use diya, if not, get small candles that only burn for a few mins.

As for food, you have the right idea about offering from right hand and such, but please do make sure the food doesn't have any meats, egg, onion, or garlic. In my opinion, It's better to stick to fruits or sweets in case you cook meat at home.
When you offer it to Ganesh, close your eyes, touch the palm of your hands together like 🙏 and imagine him accepting the food. You can eat it afterwards, in a few mins. It's important to not throw the food away.
