So, you no longer sell those products, correct? Well they should just 404. You could 410 them, but I don’t think that’s necessary.

100 percent, you should be fixing/removing internal links to all those pages. Dont link to any 404error pages. That’s a given.

If there are similar products that you’ve removed, then you should 301 those to the similar product pages. But don’t link internally to any pages that 301 redirect.

Make sure the 404 pages are removed from the main xml sitemap file.

Make a separate xml sitemap file that has the list of 404 URLs. Google will crawl those quicker. Same for the 301 URLs, a separate xml sitemap file for those 301 URLs. Again, Google will crawl those quicker.

Do a link analysis. Find all URLs that have links from other sites. Make sure those links 301 to an appropriate page of you’ve removed that product.
