So I never went on a bulk, but I was a college athlete so I'll share how I managed my diet for that.

The main principle I tried to follow was just less carbs, more fish and veggies. Oftentimes my dinners would be just be some sort of fish and a thoran with no/very little rice.

I know tofu might be harder to come by in Kerala but I would use it with Malayalee flavors too (tofu 65, or pan fried w/fish fry spices). I'd make a lot of salads that were like, thoran-adjacent and have them for lunch. It does require some creativity and sacrifice of carbs but it definitely can be done since our non-carb dishes can be quite healthy.

Oh and ymmv but I was working out/practicing a lot so I didn't track my macros or anything - just kept these guidelines in mind (didn't reduce coconut either) and I was fine. You might need to be a bit more strict depending on your activity level and goals.
