Let me take Google Pay as an example.

Add your debit/credit card in Pay with Debit/Credit Card section in the Google Pay app.

Then in your phone settings enable NFC and select Google Pay as default for NFC payment gateway.

Then everytime you wanna make a payment just turn on the NFC, hover near the pos machine and turn off the NFC mode after payment.

And I believe every phone with NFC feature will have NFC tiles option on the notification drawer, so that you can turn on /off from home screen without going to settings and searching all the time.
