Honestly speaking, not many people care much about suspension. Most riders don't ride for long regularly, and suspension is the last thing we think about in our commutes and short rides. Maybe second last at best.

What I expect when I want to eat momos:
1. Hygiene.
2. Should be economical.
3. Decent amount of filling.
4. Fresh authentic chutney that is mildly spicy, tangy and with the flavour of garlic hitting hard on my taste buds.
5. Neat and Clean environment to sit and enjoy it peacefully.




What I don't want:
1. Bland namesake chutney served right out of the fridge.
2. Fancy varieties like Gravy momo, tandoori momo, kurkure momo, etc.
3. Paying a premium price for 5 pieces of a cheap imitation in the name of momos.
4. Ketchup and Mayo as my dips
5. Unclean environment and unhygienic preparation.




My suggestions for you: 
1. Like the other user mentioned, Gloves and hair caps must be mandatory. That alone is a game changer.
2. Keep the menu simple, but do it best.
3. Mutton momos could be your star dish but I don't think it will be feasible. It's your call though.
4. Don't put any tables/desks in your shop. Just have comfortable chairs or stools. There is a special feel to holding a delicious plate of momos. Plus, you can accommodate more people too that way.
5. Go for paper plates rather than fancy plates. Those thick thermocol type ones would do.
