What GSC/GA metrics actually matter the most?

We built an SEO Chrome extension to make data analysis less painful (no self-promo, won't name it). Quick question: What metrics do you actually check often in GSC and GA? Not the fluff - the real, meaningful data you wish was easier to access. Trying to build something that doesn't suck and could really use your insights! Bonus points for sharing your “why is this so buried in 5 submenus?!” pet peeves.
