How do I redirect links from old to new sitemap?

Hey, I was wondering if its possible to redirect links from an old Website to a new one. We are taking down our old Webseite entirely and putting it on as a Shopify Site with a new URL. How would I accomplish to let Google know that? Also some URLs dont end the same
