Delete old pages

In my property at google search console, old pages are still listed that cause an error (because they no longer exist) during indexing because I have recreated the website and therefore not all links are present in the sitemap. How can I now clean up the whole thing so that only the new pages are indexed? Do I have to delete the complete property and create a new one?
