    Bamboo shoot related question! Please help!

    Hello people, I fermented bamboo shoots some months ago. Chopped in small pieces and stored them in a glass jar with water and salt. Took it in a dark place in room temperature for about 1 month. Now refrigerated. But they haven't been soft yet. Although the colour has changed to a little bit greyish, but not softer. It has a smell too that comes from fermented shoots, but I am not confident. Should I put it out of registration and store in room temperature again? How much time does it generally take to get softer and properly fermented??
