What is up with VEGETARIAN SUSHI?!

In the last year pretty much every new restaurant that has popped up in my area is selling sushi/dim sum/bao (BUT ESPECIALLY SUSHI). And it must be selling like hotcakes cause nowadays EVERY SINGLE RESTAURANT literally has the same DAMN MENU. I have been seeing this especially in the Bandra area. And people are literally buying this crap when it’s just rice with vinegar along with cream cheese, maybe a few sauces and exotic vegetables 🥑 ?! The average price for an eight piece is like 800-1200 wherever I see it. It would make sense if it was non vegetarian but VEGETARIAN?! I tried it and it was just alright. I can’t make sense of it.
