How to handle bike at such trails?

I want to understand how brakes work at slopes? If my legs are engaged in balancing the bike then how would I press rear brake? Are they using left hand rear brake? Wouldn't I fall if I press front brake at such slope? And what about gear? I've rode off side only once so I want to learn before something happens.
