Installing macOS Monterey to third volume

I'm trying to have multiple macOSs on my device to test the differences, but having trouble with Monterey. Since its older than my current OSs, I followed this to make a bootable installer for it. https://support.apple.com/en-us/101578 Using Disk Utility I made another new APFS volume to install to, powered off my mac, and restarted it to boot options. After selecting the installer, it took me to Recovery Assistant showing me my two current Volumes but not the newly made third one or any other menus. I have 450+gb of space left so thats not a problem, is it just that you can't install older versions? Monterey should be the limit for M1. * Environment: Macbook Pro M1 * Current Volumes: Sequoia, Sonoma
