Something I just discovered if you watch Apple TV on your Mac.

You can change the way the subtitles look by going into your MacOS settings, accessibility, captions. There you can pick a different profile or create your own from scratch. I personally prefer the font being shadowed with no background and you can do just that, but many other things like colour or font type.
