What’s with the recent influx of north eastern chefs in most of Chennai’s eateries? Is this the same across all cities ?

Recently I visited Chennai after almost 8 years and something that struck me was that nearly every eatery had north-eastern workers . No hate I’m just curious as north eastern chefs seems so far from Chennai ?
