Help! Planning a surprise for wife’s birthday

Hi everyone. Need suggestions as I am clueless! I want to plan something like a thoughtful surprise for wife for her birthday. Need some ideas. Quick background- 1. She is a complete non-materialistic person. So there is nothing as such I can buy 2. We have a 3 month old baby I was thinking of booking something like a unique resort (example- Asanja Titaly) But that sounds about it, what else can i do maybe at the resort as a gift to her?
